A smoke-permeable casing with a glossy, shiny surface. The AMISMOK KS casing is designed for the production of processed cheese sausages, the production process of which includes a smoke-smoking stage. AMISMOK KS combines the best properties of permeable and barrier casings. AMISMOK KS is recommended for filling hot cheese into corrugated dolls.
For the production of smoked sausages and processed cheeses
1. Smoke permeability imparts a smoky flavor and aroma to products, promotes the formation of a smoked crust and a glossy surface.
2. Uniform caliber allows for the production of standard-sized loaves, including those of a specified weight when using automatic equipment.
3. High mechanical strength allows for loaves to be formed not only by manual tying but also using various types of clipping equipment, ensuring high production speeds.
4. High elasticity allows for overstuffing of the AMISMOK KS casing by 10-12% of the nominal caliber, thereby reducing casing consumption per unit of production.
5. Low oxygen and water vapor permeability compared to cellulose films and protein casings extends the shelf life of finished products.
6. High heat resistance allows for smoking at higher temperatures compared to cellulose films and protein casings.
7. Physiological safety. The casing is not susceptible to microbiological deterioration, as the polymers used in its production are inert to microorganisms.
The casing can be printed on one or two sides. Printing options range from 1 to 6 colors, and full-color printing with translucent inks or self-adhesive labels are also available.
